Jiffy Mix Corn Casserole 


Takes me about five minutes to prepare if I have the ingredients assembled  Take 50-60 minutes to cook (55 in my oven).

2 cans of creamed corn

2 cans of whole kernel corn, with liquid
16 ounces of fat free sour cream
4 eggs
3/4 cup of sugar (experiment to your taste)
2 boxes of Jiffy Corn Mix

Mix all ingredients in large bowl.  Add mix last of all.  Pour into lightly oiled 13 by 9 pan (you'll barely get it in.)  Bake at 350 for about 50-60 minutes or until set.  Let stand five minutes before serving.

Note:  There are many variations of this recipe out there.  I actually doubled a recipe to make this one.  So, you could half mine and put it in a large casserole dish or even have enough for a 9 X 13 inch pan.

Also, some people prefer a casserole that is not as sweet.  So, they don't put in sugar.  Instead, they may top the casserole with cheese or add Mexican spices or otherwise make this to their taste.  We enjoy the sweeter version.

This is a family favorite. I also add finely minced onion.
If you ever have any leftover, not likely, but if....it's really tasty with some ham and cheese on top of it! :-)
